A J & E Hall Fusion Commercial Condensing Unit is a key component in a new cooling system at a flourishing Italian ice cream manufacturing business. Gelato.Cool Ltd of Lincoln chose the JEH2-0400-L-3 unit for its walk-in freezer which stores gelato ice cream.
Gelato.Cool needed a new walk-in freezer to cope with the demands of a growing business. The 3.5 sq m freezer is racked out to handle the 4.5 litre Napoli tins in which the ice cream is held but the main challenge for the cooling system is keeping the temperature in the freezer at a constant -22°C for deep life storage.
“Reliability and efficiency are important for us and the new Fusion unit works well. It is very quiet, hugely efficient and represents good value for money. It keeps the freezer at -22°C all day and we are very happy. We manufacture the gelato at around -14°C and the ideal serving temperature is -17°C. Our new walk-in freezer allows us to store the gelato at a perfect temperature all year round.”

“It was a turn-key job for us and we came recommended by another customer in the ice cream industry. We were delighted to be offered the chance to build the new freezer room and we have to make sure that the equipment we use is reliable and does all it should. The Fusion unit was our first choice.”
The acoustically-lined Fusion range houses a reciprocating compressor which is fitted with a compressor jacket to further reduce noise.
Mark Weston came up with the idea for the business after a long weekend in Florence two years ago. It was his curiosity to see where he could buy gelato ice cream when he returned to the UK that led him to set up the venture. The company employs five people which includes his mother Carol, sister Sarah and daughter Robyn.
Increasing Interest in Gelatarias
Gelato.Cool supplies ice cream to restaurants, cafes, bars and pubs in the Lincoln area.
"Many of our customers are Italians who run patisseries and coffee shops,” Mark explained. “We also do quite a lot of business in the area serving at festivals and outdoor events. Gelaterias are very much in their infancy in the UK but in Italy you are likely to find one every 50 yards or so in the main street.”
The most popular flavour manufactured by Gelato.Cool is jaffa cake – a combination of chocolate and orange.
“This may come as a surprise to some but there are no limits to the flavours we can produce,” added Mark.
